
Simple Strawberry Glace Pie
9" baked pie shell
6 C. strawberries
1 C. sugar
3 Tbsp. cornstarch
1/2 C. water
1 8 oz. pkg. cream cheese, softened & sweetened w/ a little pwdrd. sugar
Bake and cool pie shell. Mash enough strawberries to measure 1 cup. Mix sugar and cornstarch in a 2-qt. saucepan; stir in water and mashed strawberries gradually. Cook over medium heat, stirring constantly until mixture thickens (about 1 minute). Cool.
Beat cream cheese until smooth, adding powdered sugar to taste. Spread on the bottom of the cool pie shell. Fill shell with hulled strawberries, tops down. Pour cooled strawberry mixture over the top slowly, allowing glaze to seep around the berries. Refrigerate at least 4 hours.
The recipe works well with peaches or raspberries, also. The secret here is the pureed strawberries; much more flavorful than the clear grocery store glazes.

ReplyDelete"Louis" et Mme. la Vache had some fabulous strawberry shortcake last evening at Bakesale Betty's. This pie looks as if it would be even better. ("Bakesale Betty" makes a real shortbread base for the shortcake and uses house-made crème chantilly...)
